What is the best proportion of Sugar to Liquid to use in your Frozen Drinks?

If you use a commercial granita machine, the sugar level affects more than sweetness: it helps determine whether the drink freezes into a smooth slush or becomes too icy or soft. Here is a practical starting point for testing your recipe.

Start with the sugar already in your base

A common starting guideline is 15% to 25% added sugar by weight relative to the liquid. For example, for 1 kg of unsweetened liquid, that is 150 to 250 g of added sugar. This is a starting point, not a fixed recipe: fruit juice, soda, syrups, and other sweetened bases already contain sugar, so account for that before adding more.

The right balance also depends on your ingredients, serving temperature, and machine. Too little sugar can produce a hard, icy drink; too much can prevent the texture from setting as intended. Test a small batch and follow the recipe and operating guidance for your specific machine.

Measure, test, and adjust

  1. Mix your base and note how much sugar it already contains.
  2. Use a refractometer to measure the prepared mixture in degrees Brix (°Bx). Brix provides a useful reading of soluble solids; in mixtures with ingredients other than sugar, it is not a direct measurement of sugar alone.
  3. Freeze a test batch in your machine. If it is too hard or icy, adjust the recipe in small steps; if it is too soft, reduce sweetness or revisit the base. Measure again and record the recipe that works.

An 18°Bx to 28°Bx reading can be a starting range for experimentation, but the ideal setting depends on the beverage and your equipment. Check your machine manufacturer's guidance before settling on a formula.
