Nota importante: Para masas de pizza, rebozadas, pasta quebrada la hidratación mínima debe ser al menos del 60%

Velocidad máxima permitida 50. Si la masa está por debajo del 60% de hidratación hay que trabajar por debajo de la velocidad 50

La velocidad superior a 50 DEBE usarse solo con masas con más del 60% de hidratación.
