High or Low Temperature Dishwasher? What to Know

Today I'm going to explain the difference between a low temp and high temp dishwasher, and the pros and cons of each. If you're looking for a new commercial dishwasher for your restaurant, cafe, or catering business, this is the post for you!

First of all, what is the difference between a low temp and high temp dishwasher? Well, it's all about how they sanitize your dishes after they are cleaned. A high temp dishwasher uses very hot water (at least 180°F) in the final rinse cycle to kill bacteria and germs. A low temp dishwasher uses chemicals (such as chlorine or iodine) to sanitize your dishes at a lower temperature (around 120°F).

Low temp dishwasher pros:

  • - No risk of damaging plastic or delicate items
  • - Less steam and noise in the kitchen
  • - May be easier to install, since it doesn't need a booster heater


Low temp dishwasher cons:

  • - Less effective at removing grease and oil from dishes
  • - Slower drying time, since the water is cooler
  • - Chemical residue or odor on dishes, which may affect taste or appearance
  • - Need to buy and store sanitizing chemicals, which may be hazardous or costly in the time.
  • -No Eco-friendly solution.

 


As you can see, there is no clear winner here. Both types of dishwashers have their advantages and disadvantages. The best choice for you depends on your budget, your menu, your dishware, your space, and your personal preference.

Surely with proper maintenance, high-temperature machines end up costing less, depending on the rate of washing and spending on chemicals week after week.
